EXECUTIVE CHEF

The primary responsibility of the Executive Chef is the management of all gallery operations and to ensure that high standards are achieved and maintained within budgetary limitations. This includes all practices, procedures, training and Resident and Guest satisfaction levels.

EXECUTIVE SOUS CHEF

The primary responsibility of the Executive Sous Chef is to assist with the management of all galley operations, motivate and train culinary staff and provide Residents and Guests with the highest quality cuisine.

A procedural approach to managing the Galley department must be employed, utilizing modern management principles as well as incorporating technological innovations where practical in order to deliver top quality service to our Residents and Guests

QUALIFICATIONS/EDUCATION

  • Minimum of 5 years experience as an Executive Chef in a Michelin rated restaurant or an ultra luxury cruise ship, private club, boutique hotel, ultra luxury hotel or resort such as: Ritz Carlton, Crystal Cruises, Four Seasons, Silversea, St. Regis, etc…..
  • Must be able to manage, organize, direct and supervise up to 5 Galleys and productions rooms
  • Must provide efficient leadership for a Management team comprised of 1 Executive Sous Chef, 3 Chef de Cuisines, 1 Executive Pastry Chef and 1 Head Baker
  • Must be able to efficiently manage a team comprised of more than 50 food & beverage personnel
  • Must assist the F&B Manager in successfully managing an operation budget of over $6,000,000 annually that includes wages, overtime, travel, uniforms, food cost and operating equipment costs
  • Must have a broad knowledge of the below listed cuisines:
    • French (Classic and contemporary)
    • Italian ( Classic and contemporary)
    • American (Classic, contemporary and steak)
    • Mediterranean/Middle Eastern
    • Asian (Chinese, Thai, Japanese and Sushi)
